First French edition of the author's major work on organic chemistry and its application to physiology and pathology, translated by C. Gerhardt and printed within months after the original German edition. This was the first formal treatise on the subject as well as the first classification of organic foodstuffs and in-depth description of the process of nutrition. Liebig (1803-73) demonstrates the chemical process in respiration, including the importance of oxygen. In addition, he explains Lavoisier's theory of animal heat.
